Wine School Sees Opportunity as the Wine Industry Corrects

At a time when declining consumption and slower business have created anxiety across the wine industry, PennLive found something different happening at the Wine School of Philadelphia: growth.

The school announced plans to hire additional instructors as enrollment increased and its semester-based programs expanded. Founder Keith Wallace told PennLive that he sees the current downturn as a genuine industry “correction,” but not a reason to retreat.

“The longer-term constraint is talent,” Wallace said — particularly trained professionals who can sell wine, serve customers and communicate its value in a more difficult market.

The students arriving at the school reflect that changing landscape. Wallace described corporate professionals moving into wine, including an early group of “AI refugees”; younger students seeking practical trade credentials without taking on another degree; and established professionals pursuing wine as a serious second career.

The school’s Core Sommelier enrollment illustrates the growth. It went from two 16-student semesters annually in 2005 to four 24-student semesters in 2025, supplemented by an online track, Advanced Sommelier programs and hundreds of Level One students.

PennLive also looked at what happens after graduation.

Wine School alumni have moved into wineries, restaurants, retail and distribution. Wallace pointed to Cellar Beast, where multiple employees — including its winemaker and an owner — trained at the school, as well as graduates working in the Vernick Restaurant Group, Stephen Starr restaurants and the Pennsylvania wine trade. Others have founded wineries of their own.

Demand has grown enough that the school plans to add as many as eight part-time instructors by 2027.

For Wallace, the opportunity lies precisely in a tougher market.

“The people who succeed,” he told PennLive, “will be the ones with real fluency, not just enthusiasm.”
