🔹 WEEK 1: FOUNDATION & SERVICE

Day 1: Wine Foundations

  • Grape growing, winemaking, tasting methodology
  • The role of terroir: climate, soil, and style
  • Foundational blind tasting

Day 2: Wine Regions & Grapes I

  • France: Bordeaux, Burgundy, Loire, Rhône
  • Italy: North vs. South, DOC/DOCG structure
  • Service drills: wine identification, glassware

Day 3: Wine Regions & Grapes II

  • Spain, Germany, Austria, Greece
  • New World overview: US, South America, Australia
  • Pairing logic: flavor bridging, acid/tannin balance

Day 4: Professional Wine Service

  • Mise en place and guest interaction
  • Decanting, sparkling wine, and bottle presentation
  • Service drills in a fine-dining mock setting

Day 5: Sensory Development & Faults

  • Structured tasting: identifying varietals & structure
  • Common wine faults and how to recognize them
  • Workshop: how to talk about wine with authority

🔹 WEEK 2: DEEP DIVE & EDUCATOR TRAINING

Day 6: Advanced Blind Tasting

  • Calibration tasting
  • Structured deductive tasting system
  • Personal palate mapping

Day 7: Wine Education Principles

  • Pedagogy 101: how adults learn
  • Designing a wine training for hospitality teams
  • Delivering 5-minute educational segments

Day 8: Curriculum Building

  • Create a hotel-specific training module
  • Aligning training with brand tone
  • Creating tasting sheets and class templates

Day 9: Presentation Skills for Educators

  • On-camera and in-person performance
  • Workshop: teaching a mini class segment
  • Feedback loop and refinement

Day 10: Wine & Food Programming

  • Building experiences for in-house guests
  • Wine dinners, tastings, and VIP activations
  • Roleplay: building a wine event from scratch

🔹 WEEK 3: INTEGRATION & ASSESSMENT

Day 11: Core Exam Review

  • Full review of theory and tasting
  • One-on-one coaching sessions
  • Practice blind tastings + mock service exam

Day 12: Final Exam Day

  • Written theory exam
  • Blind tasting (2 wines)
  • Service exam (with real bottles, guests, and scenarios)

Day 13: Educator Capstone Presentations

  • Group delivery of 10-minute wine class modules
  • Peer and instructor feedback
  • Evaluation on clarity, engagement, and accuracy

Day 14: Strategic Implementation Workshop

  • How to bring wine culture into hotel spaces
  • SOP creation: onboarding, staff training, guest offerings
  • Tailored feedback session for F&B leadership

Day 15: Graduation & Certificate Ceremony
