No Snobs Allowed: Inside the Wine School’s Accelerated Sommelier Program

“The wine trade doesn’t need snobs,” Wallace told him. For the founder of the Wine School of Philadelphia, wine expertise should never be used to make people feel inferior. That philosophy may seem ironic for someone who trains sommeliers, but Wallace says it is central to the school’s approach: serious wine education without the pretension.

Calandra visited the subject as the school prepared for its week-long Accelerated Sommelier Program, taught by Wallace and Director of Education Alana Zerbe. The course compresses a semester of study into five intensive nights, covering major wine regions, grape varieties, acidity, tannins, winemaking and the sensory “fingerprints” that allow students to identify wines blind.

Wallace describes the process as deliberately demanding. Students often begin by discovering that they know less about wine than they thought. His job, he says, is to rebuild their understanding layer by layer — helped along by what he calls his “really bad sense of humor.”

By the end of the week, students are expected to identify major grape varieties, distinguish Old World from New World styles and demonstrate those skills in a blind tasting examination.

For Wallace, that final test is as much an evaluation of the teacher as the student.

“I prove myself every single semester,” he told Calandra. “I love it.”

The article also captures something less measurable. Students may arrive seeking professional credentials, but many leave with friendships they did not expect.

“One of the nicest things about it is that often lifelong friendships are formed at the school,” Wallace said. “That is something no one expects and it happens all the time.”
