On March 17th,  the Wine School held class at Heritage Winery in New Jersey for a crash-course in winemaking. This was a very special wine class, as we were teaching a dozen students in a microbiology graduate program at Temple University.

The star of the show –as to be expected– was Heritage winemaker Sean Comninos.  He took the students on a whirl-wind tour of fermentation science and engineering.  Sean graduated from the Wine School of Philadelphia in 2008, and we are thrilled to see what a great winemaker he has become.

His 2010 Hertitage BDX was one of the top five wines ever produced on the East Coast, and we got a chance to taste the 2012 just before bottling. It is yet another standout and well worth its hefty price tag.
