Hello,
I have been assigned Exam #11 for Dec 4th Coq au Vin and was curious about the recipe specifically seeking if the Chef will be using bacon or pancetta and red/white or a spirit to the base of mother sauce?

Lardon (bacon) not pancetta.
Yes, the classic mother sauce for this dish is Velouté

Here are the other ingredients:

carrots
onion
garlic
brandy
red wine
cremini mushrooms
