Hi Keith,

For the Food & Wine Pairing Final I have the Tuna Tartare. Would you be able to provide the ingredients for the dish? Will there be a Mother Sauce used? If so, which one will be the base? Will you be using Wasabi? Will there be a cheese component to the dish?

No mayo, no cheese. The dish will be garnished with a daughter sauce (mayonnaise)

Here are the ingredients:

sushi grade fresh tuna
tomato
shallot
basil leaves
Coarse sea salt
Freshly cracked black pepper
olive oil
white wine vinegar
