I thoroughly enjoyed the November food with wine class. The Cyprus flake salt was on the carrots and arugula, but don’t remember if you also salted the carrots before you cooked them in the sous vide. would you remind me?

Pat,

I did salt the carrots before I vacuum sealed them. I used Fleur du Sel salt, which is a bit sticky. It holds onto raw vegetables very well.
