French word for space between the cork and the wine in the bottle

A wine expert discussed the influence of the air space between the base of the cork and the wine in a corked bottle of wine. He used a French term that sounded like ‘ouiage‘ or maybe spelled ‘ouillage

Can you confirm the term and give me the correct spelling? Or, give me the correct term?! Help!

The latter is correct. In English we call it ullage.
