I was assigned exam #8 Zuppa di Porcini: Porcini Soup (Italian).

Can you please share your planned recipe and how you will prepare?

Do you expect the soup to have light, medium or full body?

Thanks Keith. So just to confirm, there won’t be any porcini mushroom in this soup? Truffles instead?

  • Scott, sorry about that. The recipe is correct, my translation is not: it is porcini, not truffle.

It’s in Italian, I know. White wine, olive oil, porcini, garlic, roux. That’s about it. It should have a light texture.
