About Keith Wallace

Winemaker, Chef, Author

Whether he is teaching the class, selecting the pairings, or simply talking with students. Keith is at the core of all food-related classes at the school.  A former executive chef who went on to become a California winemaker, Keith turned to teaching when he moved to Philadelphia. And we are so glad he did. When you take a class with him, you will understand why.  Simply put, he’s a force of nature.

Grassroots and Local

Since our founding in 2001, we have been working to make everything about wine better.  We’ve worked with politicians to rewrite Pennsylvania’s draconian wine laws. We fund programs to help people gain employment in the wine trade. We also help entrepreneurs develop their own wine-related companies.

“Over my long career in medicine, I’ve enjoyed many a great meal at restaurants. Since my first year in residency, I’ve been fascinated by how sommeliers can pair the perfect wine with those dinners. I am a decent home cook, but I wasn’t having consistent success in pairing wines. Some times it worked. Sometimes not, even when I made the same dish and paired it with the same wine!  Over the year’s I’ve bought dozens of books on food and wine pairing. No matter how many  I read, it seemed to get further and further from my goal of making the perfect pairing. Out of frustration, I started looking for wine pairing classes across the country. I landed upon this school in Philly and spent a week in town. It was the right choice. I learned more about food and wine pairings in two hours than I had in literally hundreds of hours of reading.  Thank you so much.

“In another life, I would have been a sommelier. I loved this class. I got this class as a gift (thank you G!) To be honest, I didn’t have extremely high expectations. I thought it would be a nice diversion. I’ve been to similar classes in New York –which cost a lot more money incidentally– and they are always a good night out, just nothing more than that.

What I didn’t know was that this Philly school is clearly run by a mad genius.  I mean that in the best way possible. Remember Robin Williams in  Dead Poets Society? It was like that. I’ve had some very good teachers and mentors in my time, but this was world-changing. Even though I live in town, I recommend the school to all my friends. It ‘s an amazing experience and well worth the trip to Philadelphia.
