Advanced California Wine Program: ACCELERATED

August 17 @ 6:00 pm - 9:30 pm
|Recurring Event (See all)
Every day for 5 days

About California Wine

The Advanced Program on California Wine is the most comprehensive course on the Cali wine trade available on the East Coast. This  full semester program is offered by the Wine School of Philadelphia with optional professional certification via the National Wine School in Los Angeles.

In this program, you will gain insight into California winemaking, history, and geography of the myriad essential wine-growing regions.  This will include the rightfully famous wine regions of Napa and Sonoma, but also many of the smaller important boutique locations like Happy Canyon of Santa Barbara  and  the Templeton Gap District

The wine program will also include the hidden history of the California wine pioneers. Unconstrained by tradition or viticultural regulation, California winemakers have changed the world of wine over the past three decades.

The program also follows the young, innovative winemakers who are once again rewriting the rules of the wine trade; From the hunt for the perfect California cru,  to the revolt against the overly-technical wine styles of the recent past. This class revolves around the fascinating stories, philosophies, and wine  of California’s top producers.

About The Wine Course

The Advanced California Wine Program is comprised of 16 hours of class study in a single week. This accelerated program offers and equal amount of class time as the regular Advanced Wine Courses. Accelerated programs are intensive but rewarding.  Bringing a lunch is recommended. Lunch can be eaten in our new lounge downstairs.  No food is allowed in the classroom during class.

Rare and Exotic Wines

August 23 @ 4:00 pm - 6:00 pm

Deliciously Exotic Wines or Exotically Delicious? That is the question  of the hour when we uncork these  amazing wines. By the end of class, you will wonder why the rest of the world has forgotten about these wines. You will be glad we haven’t.

In Search of Delicious Exotic Wines

In this class, the theme is: the more obscure and rare the better!  We have traveled –figuratively and literally– across the globe to find some of the coolest wines you have never heard of.  You will learn about –and taste– wines from obscure places and also exotic varieties. But that isn’t the most important element. It’s not enough that these are exotic wines. They also have to be damn good, too.

If you are the type of person who wants to discover great new things, then this is a class for you. If you are happy just drinking buttery Chardonnay, not so much. Some of these wines will be from exotic places, some will be made with exotic grapes, and some combine both (and those are our favorites). No matter how much you think you know, this class will open your mind to how big and awesome the wine world really is.

Exotic wines don't always come from exotic vineyards, but it helps.

Exotic wines don’t always come from exotic vineyards, but it helps.

This class will also give you great insight into the mind of a cellar master & sommelier. You’ll learn about wines and wine regions years before they become famous. As a case in point, the Wine School’s very first Exotica class was held in 2002. One of the first wines of that night was an exotic grape from a hitherto-unknown wine region:  Malbec from Argentina. How times have changed!

Too much of anything is bad, but too much Champagne is just right.

In this wine tasting class, you will discover the top producers and the best places for sparkling wine. Plus, you will learn the tricks of the trade: how to find great bubbles without breaking the bank, and what to look for when selecting a bottle. Cheers to Bubbly!

Cheers to Bubbly!

A Bit of Bubbly

Keith Wallace, the director of the Wine School is a former ambassador to Champagne (Center for Wine Origins and the Champagne Bureau, USA). Over the years, there have been a number of articles and shows that have featured his love of bubbles. The Daily News featured Keith in an article on Champagne.  There is also an old episode of Philly Uncorked, back when Keith was the co-star in the show.  And FOXnews featured Keith when bottles of Prosecco started exploding in PLCB wine shops.

Take the Confusion Out of Wine Styles

wine styles

The Wine Style Chart by Wine Folly

There are over 10,000 possible flavors in wine. There are over 500 bottles  in the average wine shop. When you hold up a bottle of wine, do you know if you are really going to like it? Have you bought an expensive bottle only to be disappointed?

If so, you are not alone. This is an issue that has plagued wine lovers for centuries. Each and every one of us has a ever so slightly different sense of taste, which means that not all wines are going to appeal to all people.

To enjoy wine to the fullest you don’t need to know every single wine style in the world. You don’t need to memorize every wine grape and every wine region. You don’t need to be a Cellar Master/Sommelier. All you really need to start your journey into wine awesome is to know YOUR wine style.

This class is designed to unveil the four keys to unlocking your your  personal wine preferences. This class is based on a decade of research, including the good folks at Monell Chemical Senses Center right here in Philly.  We have translated their work into a fun  two hour wine tasting class that anyone will enjoy.

French Wine Academy

September 10 @ 7:30 pm - 9:30 pm

Don’t deny yourself French wines. The lack of Bordeaux and Burgundy in your wine diet is unhealthy and will cause everlasting damage to your psyche.

In this class, you will taste through the essential French wine regions and grape varieties. Bordeaux, Burgundy, Languedoc, Loire, Rhone, Alsace: All the great flavors and stories will be encapsulated in this two hour tasting. You can expect a dynamic learning experience at the hands of a world-class sommelier-instructor.

French Wine

View from behind a cluster of French Wine Grapes

Why French Wine?

Our French Wine class is an important one for wine lovers. Heck, it’s virtually illegal for a seasoned sommelier not to take this class. For good reason: France remains the gold standard for fine wine around the world.

How you and I think about wine is is due to centuries that the French perfected the craft of making wine well over a century ago.  How we grow, make, bottle, sell, store, drink, and pair food is due to their innovations. Knowing French wine is comparable to reading the classics.  You can skip it, but don’t ever hold yourself up as a wine expert.

A Bit of French Wine Trivia

French wines are the touchstone that all other wines are compared to. So much so that pretty much every interview Keith Wallace (the Wine School’s founder) had done has included at least a passing remark about French winemaking. In Business Insider, Keith talks about why French oak wine barrels are more expensive than American. In a Nerd Wallet article, he compares the geology of  Texas wine country to several French wine regions.

Advanced Wine Course: Northern French Wine (Mondays)

September 28 @ 6:30 pm - 8:30 pm
|Recurring Event (See all)
Every week for 8 weeks

French Wine

For three centuries, France has long been the center of the wine world. French wine are prized by collectors and studied by winemakers around the globe. Each viticultural region in the country offers a different gustatory experience.

In France, everything is local: the microclimate, culture, grape varietals, geology, and history are intertwined into a essense some would call terroir.  Only in a full semester program like the Advanced France (North) Wine Course could shed light on such an extraordinary place.

The Wine Course

In this wine course, we take our students on a  virtual tour of the Northern French winemaking regions to illustrate the concepts of cru and terroir.  The program’s eight weeks focus in depth on a different region, including the Loire Valley, Savoie, Alsace, Jura, Burgundy, and Champagne.

We will show how Cabernet Franc takes on a completely different character depending on whether it is grown on gravel or limestone; how Sauvignon yields three different products in the hills of Sancerre when rooted in limestone, marl, or flint; how Pinot Noir will give radically different wines on a single hill in Burgundy as the vines progress upslope.

The wine course is approachable, but it is recommended students attend the Foundation and Intermediate programs before attending.

This semester we are offering this course on both Mondays and Wednesdays. This course is being held on Mondays.

Sommelier Favorites

November 12 @ 7:30 pm - 9:30 pm

Our  sommelier-instructors are pros at finding amazing wines, even when they’re obscure. They, along with a  cadre of our notable  alumni (sommeliers, wine importers, and  winemakers) came up with our official list of Sommelier Favorites.  In this class, you will get to taste each and every one of them.

Tonight, you will experience a  unique blend of education and enjoyment. You will sit  back at in our posh classroom, and taste some of the most intriguing, beautiful, and eclectic wines you will experience this year. These are the bottles sommeliers  have been buying up for their own cellars.  Sure,  some are expensive splurge wines, but others are downright affordable.  You’ll also be privy to all the inside information that made this class possible in the first place.
