From the Italian peninsula to the docks of Bordeaux, the Intermediate Certificate of Global Wine Studies is a breathtaking exploration into the world of wine. In a whirlwind of a semester, the secrets of the global wine society are unlocked. Students learn about the wine styles, varietals, and winemaking techniques of all the important wine producing countries. Upon completion of the program, graduates have a working knowledge of the types and styles of wine available throughout the world: our students become masters of the global vineyard. Earn a complete wine education in a single semester. The Core Wine Program combines our Foundation and Intermediate programs into a unified wine education experience. Plus, the Core Program student saves in tuition by taking both programs in the same semester. In the Foundation portion of the program, students will learn the techniques and master the knowledge needed to become extraordinary wine tasters. Graduates are able to identity major wine varietals in a blind tasting: a major feat for any wine professional. In the Intermediate section, students learn about the intricacies of the ever expanding world of wine. At the School, we demand that all our classes are stocked with high-quality wines. It’s our habit to open bottles that are higher in quality than most people will find on their own. We aren’t fan boys or people who follow trends. That’s just not our way. We only teach things we love. As of 2014, that includes wines from the East Coast. Discover Your Wine Style

Everything needed to brew beer. A full semester brewing program which will give you the hands-on experience any beginning brewer needs. Presented in a light-hearted but pragmatic style, the weekly classes are based in both lectures and lab work.

Class Overview

Class #1. Overview of Fermentation

Class #2. Sensory Training. A focus on beer esters, hop flavors, and faults.

Class #3. Beer Styles. A compendium tasting of classic beer styles, their origins, and modern interpretations.

At this point of the program, the students begin brewing beer, which will be sampled during the last day of class.

Class #4. The Wort. A hands-on approach to building the grain bill. In this laboratory class, you will learn how to create a wort from a full grain malt, use a hydrometer, and test water PH. This is a hands-on laboratory class.

Class #5. The Boil & Fermentation. In this class, you will learn about hop additions, proper boil techniques, and fermentation essentials. This is a hands-on laboratory class.

Class #6. Racking & Wet Hopping. The essentials of fermentation will be reviewed in this class, plus a hands-on tutorial in racking and wet hopping.

Class #7. Kegging & Bottle Conditioning. In this class, the final steps of beer making will be completed. This includes kegging and bottle conditioning the beers.

Class #8. Tapping the Keg. In this class, we crack open the beers we started brewing in Class #4.
