We suggest taking a  Wine 101: Intro to Wine class along with at least one other class in this series. Our classes range from  how to read a wine label (Great Wine Made Simple),  great ways to buy and serve wine (Sommelier Secrets), discovering why you like certain types of wine (Learn Your Wine Style),  and how to “talk wine” like a pro (Wine Smarts).

What are your desert island wines? What are the eight bottles that you could drink every day and night for the rest of your life? What wines would make living on that cursed desert island feel like a luxurious vacation? Ponder that for awhile. We did. We came up with a list — actually a bunch of lists — then threw them out and simply wandered through our cellar deep in thought.

In the end, it took about a week to make our selections. Each of us picked our most beloved wines from the thousands of great wines out there. In this class, we share them with you. This is not a classic session about terroir or history or culture: this is a class about the ultimate in flavor. Uncompromising lust-inducing brain-melting flavor. Chilean Wine Academy

The Greatest Wines of 2014

Our very first –and hopefully annual– class on the year’s best wines. Wine Spectator published it’s top 100 list in November, and wines on that list start to jump.  It’s not uncommon for wines at the top of the list to double in value. Bully for them.

We wait until January to get the final votes into our own list of the Greatest Wines of 2014. We like to make sure we taste every possible awesome wine , and we need those extra months. Our list is based on the tasting notes of our top three Sommelier-Instructors and their Advanced students. After sampling over 2K  of the best-of-the-best wines in 2014, the wines in this class are our very favorite wines.  If you want a fun class in which you taste the greatest wines of 2014, this is a no-brainer.  We feature wines at every price point, from amazing values to extraordinary splurges.

Wine Foundation Course (Winter Semester)

Classes are held from 3-5pm on Sundays, January 11th to March 1st. 

The world of wine is built on the foundation of taste. To stand tall in the wine world, the student must learn to unravel the hidden flavors of wine and speak the language of the senses. Most wine enthusiasts remain tourists of the grape: they drink and enjoy without ever knowing the greater joys hidden just below the surface. The Foundation Course is your key to unlocking that world. With it, you just may be able to turn a mere hobby into a deeply passionate and creative calling. In a single semester, students will learn the techniques and knowledge to become extraordinary wine tasters. Graduates are able to identify major wine varietals in a blind tasting: a major achievement for any wine industry professional.

Core Wine Course (Winter Semester)

 Classes are held on Sundays, January 11th to March 1st, from 3-8pm.

Earn a complete wine education in a single semester. The Core Wine Program combines our Foundation and Intermediate programs into a unified wine education experience. Plus, the Core Program student saves in tuition by taking both programs in the same semester. In the Foundation portion of the program, students will learn the techniques and master the knowledge needed to become extraordinary wine tasters.

Graduates are able to identity major wine varietals in a blind tasting: a major feat for any wine professional. In the Intermediate section, students learn about the intricacies of the ever expanding world of wine. Included in the program is the chance to master the wine styles, climates and varietals of all the major wine producing countries.

Intermediate Wine Course (Winter Semester)

From the Italian peninsula to the docks of Bordeaux, the Intermediate Certificate of Global Wine Studies is a breathtaking exploration into the world of wine. In a whirlwind of a semester, the secrets of the global wine society are unlocked. Students learn about the wine styles, varietals, and winemaking techniques of all the important wine producing countries. Upon completion of the program, graduates have a working knowledge of the types and styles of wine available throughout the world: our students become masters of the global vineyard. The Intermediate and the Wine Foundation Certificate are the core certification at the Wine School, and can be taken in tandem. For more information, read about our Core Certificate program.

Old Wines: A wine collecting class for everyone.

The Grapes of Italy

Upon completion of the program, graduates have a working knowledge of the types and styles of wine available throughout the world: our students become masters of the global vineyard. Earn a complete wine education in a single semester. The Core Wine Program combines our Foundation and Intermediate programs into a unified wine education experience. Plus, the Core Program student saves in tuition by taking both programs in the same semester. In the Foundation portion of the program, students will learn the techniques and master the knowledge needed to become extraordinary wine tasters. Graduates are able to identity major wine varietals in a blind tasting: a major feat for any wine professional. In the Intermediate section, students learn about the intricacies of the ever expanding world of wine. The Wine Trials

This class is inspired by the Fearless Critic’s book, the Wine Trials, which sparked debate over its claim that non-expert wine drinkers preferred cheap bottles to more expensive bottles in scientific blind tastings.

In this class, we will put the critics to the test. Can a great $10 bottles taste better than an expensive one? Are 90+ point wines better? Come to this class and find out for yourself. You may be very surprised at the result!

Imbibe! The Whiskey & Cocktail Class

One of the greatest whiskey authors of our generation, Michael Jackson, often visited 127 22nd Street. That was back before the Wine School, when our building was still occupied by his publisher, Running Press. This class is one of the ways we celebrate his legacy.

A bit of sauced education, this class features everything you ever wanted to know about whiskey, but were afraid to ask: From whiskey cocktails, to food pairings, to its smokey history. This is the class for lovers of bourbon, scotch, and rye.

Beer & Brewing Program

Everything needed to brew beer. A full semester brewing program which will give you the hands-on experience any beginning brewer needs. Presented in a light-hearted but pragmatic style, the weekly classes are based in both lectures and lab work.

Class topics include the following:

  • Ingredients and Equipment
  • Brewing Laboratory (Three Sections)
  • Dry Hopping Laboratory
  • Bottling and Kegging Laboratory
  • The Keg Tap

Class Overview

Class #1. Overview of Fermentation

Class #2. Sensory Training. A focus on beer esters, hop flavors, and faults.

Class #3. Beer Styles. A compendium tasting of classic beer styles, their origins, and modern interpretations.

At this point of the program, the students begin brewing beer, which will be sampled during the last day of class.

Class #4. The Wort. A hands-on approach to building the grain bill. In this laboratory class, you will learn how to create a wort from a full grain malt, use a hydrometer, and test water PH. This is a hands-on laboratory class.

Class #5. The Boil & Fermentation. In this class, you will learn about hop additions, proper boil techniques, and fermentation essentials. This is a hands-on laboratory class.

Class #6. Racking & Wet Hopping. The essentials of fermentation will be reviewed in this class, plus a hands-on tutorial in racking and wet hopping.

Class #7. Kegging & Bottle Conditioning. In this class, the final steps of beer making will be completed. This includes kegging and bottle conditioning the beers.

Class #8. Tapping the Keg. In this class, we crack open the beers we started brewing in Class #4.
